He told me that protein from soy is not easily digested and absorbed by the body, and that animal protein (from eggs or whey) is better. I get a large proportion of my protein from soy, so I want to check this out thoroughly. I've found some web sites that mention poor digestibility of soy, but those that mention their data source turn out to be based on studies in which rats were used to evaluate soy's digestibility. I have also found references to the Protein Digestibility Corrected Amino Acid Score (PDCAAS) standard for evaluating protein, which is used by the US Food and Drug Administration and the WHO. Confusingly, this also used rats for the original studies, yet found that soy is an excellent source of protein. I'd be more interested in studies of how humans, rather than rats, digest soy. Is anyone on the list aware of any such studies? Can anyone give me a reference to a web site or a book? I hope this question is not off-topic.
