the EMAZING Vegetarian Tip of the Day.

 

Onion Jam

This is a unique homemade food that makes a great gift and is surprisingly

delicious! This condiment is especially good because it can be used instead of

high calorie or salty spreads. Try it on mushrooms, zucchinis, or blanched

fennel. You will want to make this when you have 3 or 4 hours to stay near the

kitchen.

 

8 to 10 pounds yellow onions, thinly sliced

1/4 pound butter or butter substitute of your choice, such as coconut butter

1/4 cup honey (a light honey is best)

1/4 cup balsamic vinegar

 

Slice onions in food processor or by hand. Put butter and onions in a heavy

8-quart pot and cover with a tight-fitting lid. Cook over medium-low heat,

stirring every so often to avoid scorching. Use as high a heat as you can

without burning the onions. As soon as the onions wilt and reduce to about half

their original volume, reduce heat to low and continue cooking, without burning,

until onions acquire a caramel color. At that point, remove the cover, and if

necessary, lower the heat. Add honey and vinegar. Continue cooking until the

onions become a mushy mixture and there is no more juice. Check flavor; there

should be no sharp onion taste. If desired, add more honey or vinegar. This can

be refrigerated for 2 to 3 weeks or frozen. It makes 4 pints.
