There are some good and practical (i.e., easy) recipes there. It is not strictly vegan, though. DATE SUGAR: Not actually a sugar in the conventional sense, date sugar is ground from dehydrated dates. What a great source of sweetness¼dates are high in fiber, and rich in a wide variety of vitamins and minerals. Date sugar can be exchanged measure for measure for sugar in baking, for cakes, muffins, and quick breads. Use it in place of brown sugar to make crumb toppings for pies and fruit crisps. They have given up eggs and she still does organic dairy, but I have told her that I think soy is a better idea. She does not like soy yogurt, but I love the stuff. She has a baked risotto that is devine, but that may be in her new book only. I can't give out the recipe. I can only say, you do it in the oven and it is absolutely wonderful if you liberally stir in some Vegetarian Support formula yeast. It is like cheezy rice...mmmmm I can't wait for cold weather to eat this several times a week, it is so easy and so comforting.
