Hi Lisa. Thanks for the recipe. What type of margarine do you use

for it to be vegan? I use Blue Bonnet light for some vegan cooking

since there's no dairy in it, but it is whipped with a lot of water so

it's no good for baking (and a little weird for frying). I don't

usually get soy margarine since it's very expensive when you can find

it out here. Does soy margarine work for baking? Would butter

flavored Crisco work? I used that for sugar cookies the other day and

they tasted really rich. I couldn't find anything objectionable

(vegan-wise) on the label. Thanks.

i've actually used crisco in some recipes, but not for this. However,

I think it could work in this recipe.

I don't know where you live, but here in Canada we have a brand

called PRESIDENT'S CHOICE which makes a great margarine that is vegan

and decent for cooking too! It's cheap as well!

Thanks Lisa. I'm in the boonies of SW Minnesota. Our regular grocery

store doesn't carry any soy margarine. If I travel half an hour one

way I can get some at the co-op but a tiny tub is something like $3.

If I go an hour in the other direction I can get it for slightly less

but we rarely have a real reason to head to that city. It does make

being a vegan frustrating! I visited friends in Albuquerque last

winter and was so jealous of how easy it was to be vegan there. ;)

 

I'll try it with Crisco. Not the healthiest option but I can live

with that. I eat far too healthy nowadays anyway! <VBG>
