Guest guest
Hi everyone! Here is a recipe that I have adapted to make it vegan. I made these last night and they are WONDERFUL!! 2 cups flour 4 tsp baking powder 1 tsp salt 1/4 cup margarine 2 tbsp maple syrup 1 cup soy milk (i used vanilla) 1 cup dry sweetener 2 tsp cinnamon 1/3 cup margarine 1/3 raisins (optional..I used sunflower seeds) Preheat oven to 350F. Spray muffin tin with Pam. Blend flour, baking powder & salt in a large bowl. Add 1/4 cup of margarine and blend till the mixture resembles large coarse crumbs. Make a well in the center of the mix and Add soy milk and maple syrup. Mix till blended. Knead 8-10 times on a floured surface. Roll out into a 12' rectangle (1inch thick). Mix Dry sweetener, cinnamon and margarine together. If you wish you can blend in 1/3 cup of raisins. I used 1/4 cup of sunflower seeds instead. Spread on dough and roll. Cut into 12 pieces. Place pieces in greased muffin tin and bake for 20-25 minutes. Cool, then glaze. A nice glaze would be powdered sweetener and water/soy milk. You could also use Tofutti Better than cream cheese with powdered sweetener to make more of a dessert cinnamon bun PS: I used a large muffin tin and made 6 jumbo buns instead of 12 small ones. ENJOY!
