I have been enjoying Hummus for some time along with Felafel at a local middle eastern restaurant. I, too, have told restaurants that I am allergic to dairy and, yes, it elicits help from the restaurant staff. In actuality, I do have an allergy as my rosacea reacts to any dairy at all. Since I've become vegan, my rosacea has been at a standstill and I don't have to use Metrogel (pharmaceutical RX) anymore. This makes me extremely happy, to say the least. I have been eating more raw foods lately, too. I'm finding that I crave raw vegetables more and more. In fact, I'm kind of fond of grazing myself! Here's another question, if you don't mind. I am home very little due to a 100 mile commute each day. Any good quick evening meal suggestions? I put on a pot of rice, I have started using a steamer for this that works great. Make enough for two to three people I use brown rice, so this takes about 45 minutes. Go change, read mail, whatever. In 25 minutes, take a bag of frozen stir-fry vegetables from the freezer and put in a pan, mix up an envelope of sauce mix and add to the vegetables and cover and let heat till the rice is done. These sauce mixes are in the ethnic foods section, or you could use bottled sauces from there, too. You have made yourself a restaurant quality meal by doing hardly anything. Oh, you can also put the frozen vegetables and sauce in the microwave, if you'd rather. I also alternate rice with noodles or wholewheat angel hair pasta. And I do the same thing with a jar of sauce and spaghetti and bag of frozen Italian style veggies. Although that is much fussier, if you can consider cooking spaghetti fussy. SMILE The best! I cook enough pasta for 4 people (even if it's just me eating, this way I get leftovers), While the noodles are cooking, I open a 28oz can of tomato or spaghetti sauce and place in a saucepan, add a can (or 2 cups cooked) of any kind of bean you have (chick peas, lentils, black beans...) and if you have any veggies on hand throw them in too Heat sauce and serve on cooked pasta. Sometimes I even like to top my pasta with toasted cashews or sunflower seeds...yummmmmmmmmmmmm! As a matter of fact, I am having this to eat tonight! I've also made open faced toasted avocado and tomato sandwiches with soy cheese. I spread soy mayonaise on the bread or bagel, and sprinkle a little cumin, salt and pepper on top too. Good luck! Instead of using two pans for the " stir-fry " mentioned below, when there was about 10 minutes to go for the rice, I put the frozen veggies and sauce right into the rice pot and let it thaw/heat right on top of the rice. I wonder how much easier, healthier, better a meal could be (unless there is too much sodium in the sauce mix for you). The best!
