Hi everyone!

 

I just invented this recipe this weekend. Tastes yummy! VERY easy to

make as well. I used all organic veggies, but it's not necessary.

 

Potato Chard Soup

 

5 cups veggie or vegetarian chicken broth

1 onion (chopped)

1 large carrot (diced)

5 small potatoes (peeled & diced)

6 chard leaves (or Kale)

1/2 tsp thyme, dill & parsley

salt & pepper to taste

 

Fry onion in 1 tbsp of oil. Add broth, carot, potatoes & spices. Cook

on medium heat till potatoes are tender. Add chard (or kale) and cook

for another 10 minutes. Season with salt & pepper. Blend in food

processor. Eat with fresh bread :)
