Source: Vibrant Life/Nov/Dec/02

 

2/3 cup cooked brown rice

1 cup pinto beans

1 cup romaine lettuce

1 diced tomato

1/8 cup diced onion

2 Tbsp. Sour Supreme (soy sour cream)

5 olives

1/4 cup avocado

4 Tbsp. salsa

cheese substitute (optional)

 

Layer the ingredients in the order listed, or to suit personal preference.

Add chees substitute, if desired. (This will fill a plate and make a

complete meal.)

 

Yield: 1 stack; 579 calories.
