Can someone who's actually made one of the home made tofu turkeys (not the Tofurkey or Unturkey) tell me if Chinese tofu can be used? I'm worried that it might be too firm and crumbly and not hold together when I try to mold it. I really want to try making the smaller one. Thanksgiving is the hardest holiday for me, because turkey was my favorite. Also, if anyone knows of a good gravy recipe to go with the tofu turkey, I'd appreciate it. As far as I know, Chinese (regular) tofu (the kind in the water pack, NOT in aseptic package) is the kind that you are supposed to use for tofu turkeys. Japanese tofu (aka Mori-Nu) is pretty much strictly for desserts and creamy sauces or recipes specifically calling for silken tofu. If you use it for tofu turkey, you'll get mush. I always use regular tofu for tofu turkey. Just be sure you crumble it so that there are no lumps and press it according to the recipe's directions. Guest guest Posted November 28, 2002 Report Share Posted November 28, 2002 This is not very scientific but I will tell you how I make my gravy. I use canned veggie broth that I get at Kroger. I use a couple cans of that or more depending on how much gravy I want. I also put minced garlic in it and I use onion powder and garlic powder , probably about a tablespoon each. I know it sounds like a lot but this gravy is so good I also use braggs or another similar product and that makes it kind of a darker color and more similar to a " meat " gravy, and of course it makes it much tastier and healthier. I usually ad a little of water and add veggie boulion cubes,one or two, for some reason this with the broth makes a difference. Who knows why but it tastes good and I use it with my gluten roasts all the time. I also add celery seed and a little garlic salt and then I just make a thickner like with water and flour, I use unbleached flour, and then I just dump that in and mix so there is not lumps and just let that cook for a while. We dont do the traditional thanksgiving stuff, but I make a "turkey" for our Christmas dinner.
