Tell us how it turns out:) Oh and my name is Allison, I'm a vegetarian on the verge of vegan. I'm here to get tips and recipes. Warmly, Ally TOFU 5 cups of soybeans makes about 3 1/2 to 4 pounds of tofu. Start by rinsing and then soaking 5 cups of whole soybeans in 15 cups cold water overnight, or at least 8 to 10 hrs. in a cool place. Rinse well. For every cup of soaked beans, add 3 cups of water in a blender. Blend at high speed into a fine slurry. Pour into heavy pot or double boiler. Bring to a low boil and cook for 15 min. Set a colander over a large bowl or pot and line with a large piece of nylon mesh or several layers of cheesecloth. Ladle the mixture into the cloth-lined colander to strain.(You now have soymilk.) Dilute 1/2 cup vinegar or lemon juice in 1 1/2 cups hot water. Stir hot, strained soymilk in a slow circular motion. Stop the spoon upright to create a turbulence and immediately add 1 1/4 cups of the vinegar solution. Stir the soymilk once in the opposite direction. Sprinkle 1/2 cup of the vinegar solution over the top of the soymilk. Cover and leave UNDISTURBED for 5 min. Gently stir in the remaining 1/4 cup of the vinegar solution. Cover pot and leave for 5 more min. (If a very firm tofu is desired, place back on the heat and boil a few min.) Line your pressing box with cloth and set in sink. (I use a small plastic Tupperware box) Place colander in pot to press down curds and ladle out as much whey as possible. Ladle curds into pressing box. Fold cloth TIGHTLY around the curds. Press for 20 to 30 min. with a clean, heavy rock or brick. Gently remove the block of tofu from pressing box and place on bowl of COLD water. Gently remove cloth and leave the block of tofu in the water until it is cool and firm. Store in a container of cold water in the refrigerator, changing the water daily. I will for sure let you know how it goes. Also a great list to join for vegan recipes is SDA-Vegan-Cooking it is a seventh day Adventist list and that is what I am but I know there are some on their that joined just for the recipes, and they post so many nice ones and are so helpful if you have questions. It is my favorite all time recipe group. Also I have some recipes that I can share with you but if you join that group and do searches of messages you will find almost everything and anything you could want. Guest guest Posted November 29, 2002 Report Share Posted November 29, 2002 Also another thing to think of is a lot of SDA church's have cooking classes at least once a year, it is great fun and everyone is welcome and usually there is no charge but donations are welcome if you want. Also they will have samples for you to try and cookbooks, another thing is sometimes they are not all vegan but they will let you know for sure and most try to make sure they are vegan.
