Guest guest Posted December 31, 2002 Report Share Posted December 31, 2002 ALMOND JOY BARS For the bottom layer: Melt 2 cups carob chips Mix in 2 cups Rice Krispies (opt) Then spread into 9x12 pan and pat down evenly with fork dipped into water. Filling: Combine 2 cups powdered soy milk 1/2 cup honey or fruit sweetener 2 cups very finely shredded coconut 2 teaspoons powered vanilla ( you can use liquid, but powered is best) 1/2 teaspoon salt 1/4-1/2 cup water (enough to get a nice spreadable consistency) Spread evenly over bottom layer. To make topping melt 2 more cups carob chips and pour over the filling. sprinkle finely chopped almonds over the top while still hot. About 15 minutes later, before it cools completely, cut into small squares about 1 inch by inch. Refrigerate to keep the carob from getting sticky. Grin and eat it!
