great quick vegan meal

I hadn't had anything to eat all day & wanted something quick to whip up & it's quite good! I took one can of garbanzo beans & mixed it with some rice vinegar and cumin to taste. Very tasty! & You don't even need to warm it if you don't want to. :-)

hi megan - i love my canned chickpeas! they are perfect for when you're in a hurry - thanks for the idea ... something else that is simple yet amazingly good (and goes over well at potlucks or whatever - everyone always loves it) is a can of chickpeas, drained, with olive oil, balsamic vinegar, chopped italian parsley, minced garlic and a touch of sea salt

2 minute chick pea salad :)

i still have your bread machine email highlighted b/c i'm going to pull out my book and send you some tried and true - just haven't done it yet!

same here. they're low-fat, good in a pinch, & satisfy my need for carbs. :-)
