Source: 3ABN Catch the Vision Magazine/Linda Shelton 2 Tbsp. olive oil 2 onions, chopped 6 cloves garlic, minced 1 small green pepper 2 Tbsp. Bill's Best mild curry powder 1 Tbsp. sea salt 1 cup water 4 potatoes, cubed 1 cup cooked Lundberg brown rice blend 1 can Bush's best red beans 1 - 32 oz. Organic No-Chicken Broth, by Imagine 1/2 cup fresh cilantro, chopped juice of 3 lemons Saute' onion, garlic, green pepper, turmeric, curry and salt in oil until onion is soft. Add potatoes and water and saute about 5 minutes. Add broth and beans and simmer about 15 minutes, until potatoes are tender. Add rice and lemon juice. Stir and serve!
