Guest guest Posted March 26, 2003 Report Share Posted March 26, 2003 Corn-Millet Porridge Source: Recipes of Friendship Cookbook 2 cups water 1/2 cup washed millet (raw) 1/2 tsp. salt 1 cup cornmeal 3 cups water 1/2 tsp. coriander 1 cup unsweetened coconut 1 cup chopped dates Bring the first 3 ingredients to a boil. Cover and turn down very low. Simmer for 45 minutes. Mix together the cornmeal, 3 cups water, and coriander. When the millet is cooked, mix in the cornmeal mixture. Increase heat and bring to a boil. Stir constantly until thickened. Then mix in the coconut and dates. Cook a few more minutes. Good served with granola and pear sauce.
