Guest guest Posted March 27, 2003 Report Share Posted March 27, 2003 Breakfast Strawberry Rhubarb Cobbler Source: Recipes of Friendship Cookbook DOUGH: 1/4 cups warm water - 110 degrees F. 1 Tbsp. liquid sweetener 2 tsp. yeast Mix sweetener with water. Sprinkle yeast over and let sit for 5 minutes. 2/3 cup warm water 1/4 tsp. salt 1/8 tsp. orange extract 1/4 cup fruit juice 2 1/3 cups flour plus enough to make a soft dough Mix into yeast mixture. Roll into a roll 2 inches in diameter. Slice crosswise and lay on top of fruit mixture. FRUIT MIXTURE: 4 cups rhubarb, cut in 1" pieces 4 cups strawberries 1 cup raisins 1 - 19 oz. can crushed pineapple 1 Tbsp. cornstarch Layer rhubarb, strawberries, and raisins in a prepared 9 x 13 pan. Mix cornstarch with pineapple and pour over fruit. Top with Cobbler Dough (recipe above) and bake at 350 degrees F. for 30 - 45 minutes or until fruit is bubbly and dough is light brown. Enjoy!
