Guest guest Posted March 27, 2003 Report Share Posted March 27, 2003 Breakfast Strawberry Longcake Source: Recipes of Friendship Cookbook 2 cups hot water - 110 degrees F. 1/2 cup liquid sweetener of choice 1 Tbsp. yeast 3 cups oat flour (blend dry rolled oats in a dry blender) 3 cups kamut flour or whole wheat flour 1 tsp. salt 2 tsp. anise 1 Tbsp. coriander 1/3 cup olive oil 1 Tbsp. vanilla 1 cup warm apple sauce Dissolve 2 Tbsp. of the liquid sweetener in the hot water. Sprinkle yeast over water and let sit for 5 minutes. Next stir in the remaining wet ingredients, then the dry ingredients. Immediately pour the batter into a prepared 9 x 13 inch pan. Don't let it rise! Bake at 350 degrees for 30 - 40 minutes. Cool and serve the next day. Serve warm (reheated) with sliced fresh, frozen or thawed strawberries (or your favorite fruit) and a vegan whipped topping. It is great plain also.
