Guest guest Posted March 26, 2003 Report Share Posted March 26, 2003 Pineapple Millet Crumble Source: Recipes of Friendship Cookbook 1 cup cooked millet 1 1/4 cups unsweetened pineapple juice 1/4 cups dates 1 tsp. vanilla 1 tsp. coriander 1/4 tsp. lemon extract 1/4 tsp. salt 4 cups granola, divided (gf if necessary) 4 sliced bananas 2 cups crushed, unsweetened pineapple Blend first 7 ingredients in blender until creamy. Lightly oil a 9 x 13 inch baking dish. Spread 2 cups of granola evenly over the bottom of the dish. Layer with bananas, crushed pineapple, and millet mixture. Top with remaining 2 cups of granola. Chill. Serve with a creamy vegan topping.
