Lemon Cream Pie or Pudding

Source: Foster's Favorites

 

1/2 cup cooked millet

2 cups water

1/2 tsp. salt

1/3 cup raw cashews, cleaned

2 Tbsp. lemon juice

1 inch lemon rind

1/4 cup honey (or alternative liquid sweetener)

1 - 9" pie shell (gf if necessary)

 

Cook millet in water until water is absorbed (about 45 minutes). Blend all ingredients until smooth. Pour into pie crust and chill. Serve with a tofu whipped topping or fresh, chopped fruit.

 

Note: If mix seems to thin you may want to add agar. Dissolve 1/2 - 1 tsp. sagar (depending on how thick you want it to be) into 1/2 cup water and bring to a boil. Add to mixture before chilling.
