Pumpkin Pie

Source: Foster's Favorites

 

2 cups cooked pumpkin, or winter squash

1/2 cup dates

1/2 cup raw cashews, cleaned

1 Tbsp. sorghum or molasses

3/4 cup cooked brown rice

1 tsp. vanilla

1 tsp. coriander

1 Tbsp. frozen orange juice

1 cup water

1 tsp. Emes gelatin

1 - 9" pie shell (gf if necessary)

 

Place all ingredients except water and Emes (vegan) gelatin in blender. Bring water and Emes gelatin to boil and add to blender. Blend until smooth. Pour into pie shell and bake at 350 degrees F. for 25 minutes. Chill and serve.

 

Note: You may need to blend the filling half at a time.
