Tofu Cheese Cake

Source: Foster's Favorites

 

1 - 12.3 ounce package silken tofu, extra firm

1 cup drained unsweetened crushed pineapple

1/2 cup date butter

1 tsp. vanilla

1/2 tsp. salt

1 1/2 tsp. agar powder

3/4 cup water or fruit juice

1/2 cup raw cashews, cleaned

1 - 9" granola pie crust (gf if necessary)

1/2 cup chopped raw walnuts

1 recipes Tropical Topping (optional; recipe to follow)

 

Combine the first five ingredients in a bowl. Dissolve agar powder into the water or fruit juice and boil for 2 minutes. Place agar mixture and cashews in blender and blend until smooth. Add the mixture in bowl and continue blending until very smooth. Pour into crust and sprinkle walnuts on top. Chill before serving. Spread Tropical Topping over cake evenly before serving.
