Guest guest Posted April 2, 2003 Report Share Posted April 2, 2003 Banana Cookies1 egg substitute1 cup brown sugar1/4 cup vegetable oil1 1/2 cups bananas, mashed, about 31/2 tsp. vanilla extract1 1/2 cups all-purpose flour1 1/2 cups rolled oats1 tsp. baking soda1 tsp. cinnamon1/4 tsp. nutmeg1/2 cup walnuts, chopped or 1/2 cup mini chocolate chipsPreheat oven to 350: and coat baking sheets with Pam. Beat the egg substitute , brown sugar and oil with an electric mixer until smooth. Add the bananas and beat again. Add vanilla, flour, oats, baking soda, cinnamon and nutmeg and beat until well mixed. Stir in the nuts or chocolate chips. Let the batter sit for about 5 minutes so that the oats can absorb the liquid. Drop the batter by rounded tsp. about 2" apart onto the baking sheet and bake for 12-15 minutes.Cool on wire rack.
