OAT AND WHEAT MUESLISource: Guilt Free Comfort Food Cookbook (adapted)1/2 cup whole wheat berries, uncooked1 1/2 cups irish oatmeal, not quick cooking, uncooked1/2 cup raisins2 cups unsweetened apple juice1 cup nonfat plain soy yogurt1/4 cup liquid sweetener2 cups coarsely grated, unpeeled apple1/4 cup toasted wheat germ3 T. toasted slivered almondsCook wheat berries in boiling water, just enough to cover, 15 mins. drain and cool. Combine wheat berries, oatmeal, raisins and apple juice in a heavy saucepan; bring to a boil, stirring constantly. Remove from heat and let cool to room temp. Stir in soy yogurt, liquid sweetener, apples, wheat germ, and almonds. Refrigerate 4 hours or overnight before serving. Serve hot or cold.6-1 cup servings
