Gluten made with whole wheat flour is better than that made with white flour. Gluten can be used in small proportions with other legumes, and nuts to make nourishing and digestible meatless dishes. 12 cups whole wheat flour 4 cups water, cold Mix together to make stiff dough. Cover with cold water and let stand few hours or overnight. Wash gluten until water is clear (about 5 times) rinsing and adding fresh water each time. Cut gluten in pieces and drop in boiling broth. Broth for Gluten: Boil together: 8 cups water 1/2 cup soy sauce 1 cup tomato juice 1 Tbsp. nutritional food yeast 2 Tbsp. onion powder or 2 fresh onions Salt to taste Vegex to taste Add homemade gluten in pieces to boiling broth and let simmer until most of liquid is gone. Thicken remaining broth with little arrowroot or whole wheat flour and 2 Tbsp. oil. Serve over the gluten steaks. Heat in oven. Gluten can be dipped in breading meal and browned in skillet. Top with gravy. Bake. Gluten can be ground and mixed with soybeans, nuts and legumes for roast, casseroles. "The spirit of hospitality can thrive in the humblest circumstances.
