You will never need to try another banana muffin recipe again! 1/2 cup non-dairy margarine 3/4 cup washed raw cane sugar Substitute 2 eggs (Ener-G Foods Egg Replacer works well) 1 1/4 c ripe mashed bananas 1 cup unbleached flour 3/4 tsp baking soda 1/4 tsp salt Preheat oven to 325. Beat margarine, sugar and egg substitute until smooth. Add bananas and blend. In a separate bowl mix flour, baking soda and salt. Slowly add to banana mixture and blend until smooth. Grease pan (muffin or loaf) or use muffin liners and fill 3/4 full. Bake at 325 for Muffins: 20 minutes Loaf: 40-45 minutes Makes 12 muffins Let me know if you like this.
