Guest guest Posted April 28, 2003 Report Share Posted April 28, 2003 Garlic Rice with Pine Nuts 1 small green pepper, cut into strips 1 small red pepper, cut into strips 1/4 cup pine nuts, or slivered almonds 1 clove garlic, minced 1 Tbsp. vegan margarine, melted (or olive oil) 2 cups rice, cooked in chicken-style broth 2 Tbsp. parsley, freshly chopped Cook peppers, pine nuts, and garlic in margarine in large skillet over medium-high heat until light brown.
