VEGAN LASAGNA

Source: Cousin Juli

 

1 lb lasagna noodles, cooked

1 - 32 oz. jar spaghetti sauce

 

In a blender, combine until very smooth:

2 c. water

1 c. cashews, raw

2 tsp. salt

6 sections garlic, pressed

1/2 lg. onion

2 tbsp. brewers yeast

1 sm. jar pimentos, chopped

1/4 c. oil

1/4 tsp. tumeric

 

1 pkg. tofu, extra firm

2 small cans sliced olives

 

In a casserole dish (9 X 13), layer noodles, sauce, crumbled tofu,

and sauce from blender. Top with sliced olives. Bake at 350 - 375

degrees until bubbling. To rewarm, mix 1 8 - oz. can tomato sauce and

1 cup water and pour over top and warm until bubbling.
