here is my favorite vegan version of " chicken soup " . It substitutes

chickpeas for the actual chick. :) It's from " Vegan Vittles " by Joann

Stepaniak.

 

Megan

 

SADIE'S VITALITY BROTH

 

6 cups water

1 15-oz. can garbanzo beans, rinsed well & drained

4 T. nutritional yeast flakes

1 T. minced, fresh parsley, or 1 t. dried parsley flakes (or more to taste)

1 t. salt or to taste

1 t. toasted sesame oil or corn oil

1 t. onion granules

1/2 t. paprika

1/2 t. ground coriander

1/2 t. garlic granules

1/8 t. turmeric

3/4 c. orzo (a rice-shaped pasta) or any other uncooked small pasta of your

choice

 

Place all the ingredients except the pasta in a 4-1/2-quart saucepan or Duch

oven, and bring them to a boil. Add the pasta to the boiling mixture, and

stir well. Reduce the heat slightly and simmer the soup, stirring

occasionally, until the pasta is tender, about 20 minutes. SErve hot.

 

Yield 4-6 servings.

 

Per serving: calories 214; protein 10g; carbohydrates 36g; fat 2g.
