Guest guest Posted May 12, 2003 Report Share Posted May 12, 2003 One Pot Mexican Chili Gently fry the onion and celery in a little oil, add garlic and spices and heat for 1-2 minutes. Add the mushrooms, continue to fry gently for a few minutes before adding the rest of the vegetables and beans and tomato puree, stir, cover and simmer for 10-15 minutes. A few minutes before serving stir in the tomatoes, when they are ’just’ cooked, serve with rice, tortillas and guacomole (avocado mashed with garlic, chili and a chopped tomato). You will need: 1 medium onion, chopped, 3-4 cloves garlic, chopped 3-4 tbsp tomato puree 1 tsp hot chilli powder 1/2 tsp ground ginger 1/2 tsp ground coriander 1/2 tsp ground cumin 1 red pepper, chopped 3 sticks celery chopped 1 sliced courgette 250g/ 9oz mushrooms, sliced 1 can(400g/14oz) kidney beans 1 can baked beans 4 tomatoes cut into segments Quote Link to comment Share on other sites More sharing options...
