Ayvar recipe

K, here is the recipe for Ayvar [pronounced Eye-var]. The recipe is

from Yugoslavia and I found it in a mediterranean [spelling?]

cookbook.

 

I dislike it but my girlfriend and father both enjoy it.

 

Ayvar

 

One red bell pepper

one medium eggplant

1/3 cup olive oil

1 tablespoon ground cumin

1 tsp lemon juice

1 tsp basil

 

Preheat the oven to 350 degrees. Line a baking sheet with foil and

put the veggies on the foil. PRICK THE EGGPLANT SO IT WON'T

EXPLODE :)

Bake veggies one hour. Remove from oven and allow to cool. Remove

stems but not seeds.

Put oil in food processor and add veggies. Process until there is a

rough puree, adding more oil if necessary. Add remaining ingredients

and blend well.

Can be served on endive leaves or pita bread.
