Guest guest Posted May 27, 2003 Report Share Posted May 27, 2003 Scalloped Potatoes Source: The Best of Silver Hills 4 medium potatoes 1 small onion, sliced 2 cups water 2/3 cup raw cashews 2 Tbsp. unbleached white flour 1/2 tsp. salt Peel and slice potatoes into scallops and boil until slightly cooked. Drain and set aside. Lightly saute onion slices in a little olive oil. Layer potato scallops and onion rings in the bottom of a vegetable oil-sprayed casserole dish. Place water, cashews, flour and salt in a blender and blend until smooth. Pour blended mixture over potatoes. Bake in a preheated oven at 350 degrees for 30 to 45 minutes.
