Guest guest Posted June 12, 2003 Report Share Posted June 12, 2003 Breakfast Tofu and Rice Source: Healthy Food Choices 1 cup tofu (usually 2 blocks) 1/2 cup celery, sliced thinly 1/2 cup sliced green onions 1 cup diced eggplant 1/4 tsp. salt 1 Tbsp. Bragg Liquid Aminos (or soy sauce) 1 Tbsp. chicken -style seasoning (Bill's Best; McKays, or homemade recipe in archives) 1/8 tsp. turmeric 4 cups cooked brown rice 3 Tbsp. minced parsley Drain and cube tofu. Steam celery in small amount of water until nearly done. Add onions and eggplant. Mix tofu and seasonings together. Combine all ingredients and simmer a few minutes in a non-stick pan to combine flavors. Serve with crackers or toast.
