Guest guest Posted June 14, 2003 Report Share Posted June 14, 2003 My housemates here usually just fry up some TVP and dump a packet of taco or burrito or chili seasoning in it, when they want to make taco's. I've experimented with their technique and figured out how to fake a good sloppy joe. Now i wanna make my own tacos and have encountered a little problem: i don't have any packets of taco sauce or taco seasoning. what i DO have, is a cupboard of herbs and spices at my disposal. Saute 1 medium onion, chopped, with the soaked TVP in 5 tbsp oil. Season with salt and pepper, chili powder, garlic powder and soy sauce. Guest guest Posted June 17, 2003 Report Share Posted June 17, 2003 Combine the following into a dry mix to keep on hand for taco seasoning. Whole Cumin Seeds Coriander Seeds Garlic Powder Crushed red chilis (give a crush in your hand to release the oils) Chili powder (use a combo of Hot New Mexico & Pasilla for better flavor) Thyme (give a crush in your hand to release the oils) Sea Salt Fresh ground pepper Mexican Oregano (not greek) Toast (in a dry skillet) cumin and coriander, cool, then grind to a powder. If you can not find these items use ground cumin and a dried cilantro flakes. These first 2 ingredients along with the chili powder will be the base for your flavor. I would start with your meat substitute (I use morning star farms veggie crumbles - 1 pkg = 2 lb of ground hamburger) and add a little of each of the above until you find the flavor you're looking for. I would start with 1 tbsp cumin and coriander, 2 tsp. garlic powder, red chilis, 3-4 tbsp chili powder, 2 tsp thyme, pepper, and oregano. Add the salt last shouldn't need more than 1-2 tsp. This is my personal mix but your tastes will vary so experiment and see what you come up with.
