A friend of mine got married a few years ago and she hired a caterer to do an all vegan buffet for her. Her total budget for the entire wedding was $5,000, and so it had to be pretty reasonable to get the food. It was just wonderful! They first had a HUGE display of steamed asparagus, which I ate about 5 plates of. There was a very very big salad display and they offered pasta with 3 different sauces. The caterer also made some out- of- this- world appetizers. My friend had no alcohol at her wedding (they served little glasses of chai) so that kept the price down. Check with some caterers in your area and you might be lucky enough to find one who can cook vegan and do it for a price within your budget.

I'm getting married in three weeks, and luckily for us, my fiance's Mom used to be a baker. Neither of us really care for regular cake, so we are having a vegan carrot cake instead. As for food, we decided to make as much as we can ourselves. The menu is going to include veggie platters, salad, a lentil wedding soup, and some sort of pasta dish. The paper VegNews did a great spread on this a few issues back.

I should have it somewhere. I'll look around my piles. Maybe they can send you a back issue.

The Benton Sister's Cookbooks have "especially nice" vegan recipes that would be suitable for weddings. Volume 3 of "What's Cookin' in the Benton Sister's Kitchen" has a recipes and photographs of elegant vegan wedding cakes that they have developed the recipes for.
