My diet already consists of lots of meatless foods, but I am interested in going completely vegetarian. Here are my stumbling blocks: I've done many searches for healthy vegetarian dishes and many of them contain spicy or " hot " ingredients, which I can't eat - not even very mild ones. I have a medical condition which I've been researching and found out that soy products may counteract the medications I have to take. Alot of the dishes I've found also incorporate soy products for protein. What else can I do to make sure I'm getting the right nutrients (especially protein) if I can't have a staple of this way of eating? I love fruits and veggies and I eat alot of pasta, too. Other ways to get protein are beans, rice, corn, peas, nuts and more.
