Cheddary Cheeze Sauce

Amount Measure Ingredient -- Preparation Method

1/2 cup nutritional yeast flakes

1/2 cup flour

1 teaspoon miso -- or salt (miso is better!)

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

2 cups soymilk or rice milk

1/4 cup margarine or corn oil (cold-pressed)

1/2 teaspoon paprika

1/4 teaspoon mustard powder (use half as much for milder cheeze)

 

In a medium saucepan, mix flour, nutritional yeast, onion and garlic powders,

paprika, and mustard.

 

Whip in milk and miso. Cook over medium heat, stirring constantly, until mixture

becomes thick. Remove from heat. Mix in margarine and mustard. Use immediately,

or refrigerate in covered container. Reheat gently, adding more 'milk as needed,

to thin to desired consistency.
