(You can even use low fat coccnut milk if you'd like.) Mango and Coconut Smoothie from Cookshelf Thai by Christine France 4 servings 2 large, ripe mangos 1 Tbsp. powdered sugar 2 1/2 cups coconut milk 5 ice cubes (crushed) shredded, toasted coconut to garnish **************************** Cut the mangoes in half and remove the pit. Cut away the peel and coarsely chop the fruit " flesh " Place the chopped mango in a blender or food processor with the powdered sugar and blend until completely smooth. Add the coconut milk and crushed ice to the blender or food processor and bland again until frothy. (I find it is best to use a food processor, or crush the ice in a zip bag as much as possible. Crushing ice is a perfect way to burn out a good blender.) Pour into 4 tall glasses, and garnish with toasted, shredded coconut.
