Tonight I made a huge pot of "chicken" noodle soup using Worthington FriChik. It was fantastic! I'm a vegan soup gourmet and this one is definitely an A+++++. I gobbled down 2 big bowls of it. For the broth you have to use McKay Chicken Style Seasoning, which is vegetarian. The only place I've seen it is at Seventh Day Adventist's stores.

Hi all,

 

I'm trying to use of some of the zucchinis from my garden, and I came

across an interesting recipe for a zucchini sauce - but it calls for

heavy cream. Does anyone know of an appropriate vegan substitute?

Kelly, I usually use plain soymilk (not vanilla or sweetened) in place of

cream in savory recipes and they turn out nicely. I'm using garden zucchini

for meals these days too! Last night I made a quinoa pasta dish with

chopped zucchini, sweet onions, fresh basil, and chopped tomatoes. Seasoned

with olive oil, salt, and tamari sauce. . .it was well-received at the

supper table!

An easy subsitute is to whizz up some silken tofu with

some water in a blender and add a pinch of unfrefined

sugar until you get the desired consistency.
