How about a bag of multi beans. They are like 15-bean mix, etc. Just make up a little seasoning bag and maybe take along an onion. Who says every meal has to have a fresh veggie; certainly no kid I ever knew... SMILE

that sounds good...no kids with us...just myself and my friend...I'm thinking

of bringing along a bunch of fresh veggies, fruits and some baked tofu and

bread w/ vegan mayo..my friend isn't vegan but she will be for the

weekend! :) the beans sound like a good idea, too!! Just found out it's

supposed to rain while were on the island we're camping on! so, rainy

hikes..our site is on a 15 foot cliff over Lake Michigan! Should be nice

regardless...was hoping for sun, though...

What do you mean by no cooking. Not even boiling

water?

 

No Cook Bean Dip and Burritos

 

One the simplest no-cook meals is a bean dip I used to

make while on driving vacations through the western

US. I’d simply stop at a supermarket and buy a can of

vegetarian refried beans, a jar of salsa, small bunch

of green onions and a jar of pickled sliced jalapenos.

I’d then chop up the green onions with my Swiss army

knife and mix them in a bowl with the refried beans,

then add the some of the salsa and jalapenos and mix

it into a smooth consistency. I’d then scoop it up

with tortilla chips as is or roll it in flour

tortillas with chopped tomatoes, lettuce, black

olives, avocados etc for a ‘no cook burrito’. Who

needs Taco Bell?

 

Three Bean Salads

Simply mix two or three different types of small cans

of beans or corn (drained) together, add some chopped

green onion, a chopped tomato, maybe a jar of pimentos

or chopped pickles and top with a little oil and

vinegar (or pickle juice).

 

California Succotash

Mix a small can of red kidney beans with a small can

of corn kernels (or ‘Mexicorn’), chopped green onions

and top with salsa and a few black olive slices.

 

If you can make boiling water I can tell you how to

cook all sorts of vegan meals in a wide mouth thermos.
