Roasted Tomato , Basil and Rosemary

10 Pounds Tomato -- quartered, over ripe

 

1 1/2 Tablespoons Dried Basil

1 1/2 Tablespoons Dried Rosemary

Oil -- to coat

1 Onion -- finely diced

2 Stalks Celery -- finely diced

 

coat toamtos with oil and basil and rosamary

 

 

roast for an hour

 

mean while saute onions and celery

 

add tomato mixture to onions cook for another 30

minutes

 

puree mixture in a food processor then press threw a

fine strainer

 

warm threw and serve
