hi rashunda,

where in NC do you reside? i have visited around there in part just to eat!

let me know, as I may be able to refer you to a few areas.

as far as fast goes, stick to fast cook grains and beans, or make a large

batch of brown rice and fridge it, add canned beans you spiced up.

when i know i am going to have a hectic week, i spend one day off ahead of

time to go to the market, get all my veg and fruits, and preprep it up.

that way i know i have everything ready and i just have to grab a handful of

whatever is handy in the fridge and toss it in a pot. it is a big relief to

have sliced onions, peppers, carrots, celery, and washed fruits handy. i

make a big container of brown rice and fridge it, that way i can saute

veggies and throw in a couple scoops of rice and wala! dinner is served.

as for tofu, i take extra firm, freeze, defrost & drain, cube, and then

saute in a nonstick till firming a bit, then i douse it with fajita

seasoning and nutritional yeast which gives it a crunchy firm and tasty

coating. saute a bit more, and then fridge. i put this in salads (like

croutons), as well as pretty much anything else, mexican, rice and beans,

whatever.

I only started to do much cooking this summer. I am interested in using

spices better than I currently do. What spices do you prefer for canned

beans?

hey steve,

i like to do some of these:

i add all sorts of things to black beans (my fave), like salsa and cilantro,

or lime juice and cilantro, or a pureed chipolte pepper and you guessed

it--cilantro. one of my fave herbs, i grow a lot of it fresh and just grab

a handful. and always a whole lots of garlic. i use minced, roasted, and

also granulated or powdered. cumin works well too. i also like to add

minced red onion, raw or slighlty carmelized.

lentils i make fresh, with lemon juice, and i will toss in garlic,

coriander, onion powder, sometimes a bit of cinnamon, or dill. if i use

dill, i use a lot and toss in frozen spinach and some canned tomatoes. or i

make a mash by doing just the beans, and then puree in the processer or

blender.

white beans i use dill and coriander, garlic, onion powder. sometimes i use

fresh rosemary (or powder) instead of dill. i use a drizzle a balsamic

reduction sometimes too.

chickpeas i like to add anything to. i don't usually eat them whole, but

sometimes i will throw them in tomato broth for a quick meal. i usually

puree them with tahini and lemon juice, pepper, garlic ect. i also love to

add everything on hand, paprika, hot sauce, olives, lime, roasted garlic and

red peppers, basil, rosemary, cilantro, dill, whatever i have that needs

using.

for all of these things i also always add a pinch of sea salt and fresh

cracked pepper and white pepper. sometimes i use tamari instead to give

that almost smoky flavor. oh yes, almost forgot. i love to use chipolte

peppers that are canned in adobo sauce. they are HOT so beware, but i

drizzle a bit of the adobo sauce into bean mashes and it adds a hickory

flavor. very tasty!

and then there are salads, just add beans to whatever you have: diced

peppers, red onions, soy beans, peas, corn, artichoke hearts, hearts of

palm, scallions, whatever. then drizzle with vinegar or fruit juice (lemon,

orange, lime), and add fresh herbs. i like to make things like this and add

couscous or rice, or add greens and make a wrap.

Thanks! Foor for the tummy and food for thought. I've never heard of

cilantro!

cilantro is also known as coriander. This name is more common in some areas.

Hi Jen! A very simple recipe I have is to take diced potatoes (frozen if

you want) fry in a little oil till soft, add some broccoli and corn, then

whatever you have in the fridge and freezer. Cook till the potatoes are

browned. I like to add a little lemon salt and cayenne, but if you adjust

this to yr taste you can't go wrong.

Hi all!

I am new on this list and thought I should introduce myself. My name is Liberty Campbell, I am 19 (almost 20) and I have been vegan for 7 months. It is the best thing I have done. I was vegeterian for a couple of years before that. My mom and one of my sisters are both vegan also and another sister is vegeterian. We love to experiment with new vegan recipes and I am looking foreward to swapping them with you all.
