Skillet Corn Bread

Source: 3ABN/Paula Eakins

 

1 cup whole wheat pastry flour

1 cup yellow cornmeal

1 Tbsp. baking powder, aluminum free

3 Tbsp. canola oil

1 tsp. sea salt

3 Tbsp. fructose

1 1/4 cups soymilk

 

Preheat oven to 400 degrees.

 

In a bowl, add dry ingredients.

 

Add soymilk and oil, stir just enough to moisten dry ingredients. Do not beat.

 

Lighlty spray skillet with oil, pour in batter mixture, bake in hot oven for 30 minutes.

 

Serves: 8

I just made this and it was fabulous!! Thanks! I also made red beans

and rice, greens, and blackened tempeh. The corn bread was a

wonderful addition. Marisa

I'm glad you enjoyed it, Marisa. I recently obtained more of Paula Eakins recipes and I will be posting them soon. They aren't available in cookbook form, so any I receive, I value. Thanks for the report!
