Any suggestions or helpful hints on how to cook the beans or process them so I can enjoy them? HEELLLPPP! Guest guest Posted August 3, 2003 Report Share Posted August 3, 2003 Sandy, for best " tenderness " and " ease of digestion " I find that soaking beans for 24 hours first and then cooking them very slowly (about 1 day) works best for helping with digestion problems. I generally soak more beans at a time than I need, so drain the ones I won't be using immediately and place them in a zip-lock bag and freeze them until I'm ready to cook them. Other suggestions are to eat beans with pineapple, take digestive enzymes (vegan form), or use a commercial digestive product (Beano, although I've heard that Beano is not a vegetarian product so I don't use it). ~ LaDonna ~ Quote Link to comment Share on other sites More sharing options...
Guest guest Posted August 4, 2003 Report Share Posted August 4, 2003 Hi, I'm not sure where you live but if you are anywhere near a Mexican grocery I would highly recommend getting " epazote " there, a (fairly inexpensive) herb that Mexicans traditionally cook with beans. I've heard and read testimonials about other herbs and spices but epazote (the dried kind is fine) is the only one that I've found that works. Guest guest Posted August 4, 2003 Report Share Posted August 4, 2003 Another tip for cooking beans so they are more easily digestible: After soaking the beans for one hr. or up to overnight, change the water and rinse the beans. Cook the beans in a pot full of clean water. This also works if you want to by-pass the soaking stage of the beans. The beans can be boiled for a few minutes, then allowed to cool. Then discard the water, rinse the beans, and cook in a pot full of clean water. I can't remember the explanation for why this helps the beans to be more easily digestible, but it has something to do with the first batch of water containing the substances that cause digestive pain.
