TVP goodies in a Blanket

 

Vegan Recipe by Cheri Moon AllanInvented August 26, 2003 GraderThings

Ingredients:

 

 

 

 

1/2 cup TVP "Beef" Flavor

 

 

2 cups water

 

 

1 can mushroom stems and pieces

 

 

1 envelope vegetarian brown gravy mix

 

 

1/4 cup chopped onion

 

 

4-5 garlic cloves, minced

 

 

1/4 cup non-dairy sour cream

 

 

8 slices cheddar flavored soy cheese

 

 

1-2 T olive oil

 

 

1/4 cup fine bread crumbs

Instructions:

Combine TVP and 1 cup water in microwave-save bowl. Heat on high for three minutes or until water boils. Drain off excess water; set aside.

Sauté onion, mushrooms, and garlic in olive oil. Add TVP, 1 cup water, gravy mix, and sour cream. Cook on medium-high until thick.

Roll out biscuits as big as possible. Add one slice of cheese and 1/4 cup mixture to middle of each biscuit. Pinch sides together to seal mixture inside.

Roll in bread crumbs. Place on ungreased cookie sheet.

Bake at 375° for 15 minutes or until golden brown.

Yield

8 servings.

 

How the Name 'Coperta' was Chosen

Note by Cheri's Husband, Sterling:This recipe came to Cheri when she awoke from a nap today. It seems that this recipe is good enough to stand out as a one-word named dish, like "pizza." Flavors of TVP, and cheese, and other ingredients and combinations might change, but the overall concept is good stuff in a 'blanket.' I went to the Internet and looked up the word 'blanket' in other languages. Coperta is Italian for Blanket.
