Guest guest Posted September 16, 2003 Report Share Posted September 16, 2003 Over the summer I borrowed a cookbook from a library in another town, that had a recipe for raspberry jam thumbprint cookies. The ingredients in the cookies included maple syrup, brown sugar, and a block of mashed tofu. Does anyone recognize this recipe and have a copy of it they can send me? If so it'd be really appreciated cuz they were some of the best cookies I've ever had and I really regret not getting a copy of the recipe when I had the chance. Guest guest Posted September 16, 2003 Report Share Posted September 16, 2003 Hi Kayleen I have an awesome thumbprint cookie recipe but it calls for almonds instead of tofu so it's not the same ... maybe you'd like to try it anyway (assuming you're not allergic) as you can see, these are not too sweet which is great for me and my kids but you could add in some brown sugar if you like a sweeter cookie 1 1/2 c. chopped almonds (raw - I use the food processor to chop) 2 c. flour (I use whole wheat pastry) 1 - 2 T. cinnamon (depending on how much you like it ... they are really good with 2 T.) 1/4 t. salt 1/2 c. maple syrup 1/2 c. oil Mix all ingredients together and form into small discs ... press onto ungreased pan with thumb and add a dab of raspberry or apricot (something tangy works best) jam to each cookie.
