The restaurants that have good atkins options tend to not have vegan dishes, and vice-versa. I'd like to have them over and cook some veggie dishes for them - show them they don't have to eat animals to be healthy. Do any of you know what might work for both diets - vegan and atkins? I'd even be willing to amke them a cheese sauce if it meant getting them to have some veggies rather than just meat. From there I searched the recipe archives and found the following, among many others: http://atkins.com/food/recipes/all/Veggie_Kebabs.html http://atkins.com/food/recipes/all/Grilled_Peppers_and_Onions.html Here's the page where you can search the recipes: http://atkins.com/food/index.html Try searching for "vegetables" or "vegetarian" -- you get back quite a few results! What i'm finding surprising is that the Atkins people i know seem to stick to just meat and dairy and fats and avoid veggies as high carb. I'm surprised to read on the web that they really could be (and should be) eating vegies and still be within the diet. I'll see what i can do to get more greens into their bellies! That's been my biggest beef (ba dum bum!) with the publicity around the Atkins diet: most people don't do enough reading and learning about it before they try to follow it, and they end up following it incorrectly. Personally, I believe Barry Sears' "Zone diet" books are largely responsible for a lot of the myth accepted as fact about the Atkins diet and what "low carb" supposedly means. Much of what "low carb" diet followers are supposed to be shunning is really starches and other simple carbs -- and we'd all do well to limit our intake of simple carbs. As a runner, I make an effort to keep my simple carb intake low, and my (plant-based) protein and complex carb intake high. It works for me.
