I don't know if Linda's pumpkin pie receipe has changed in the last 2 years,

but she has it posted in the recipe section on the RawSeattle web site:

as it is my first fall season as a vegan, i was wondering if anybody knew a vegan pumpkin pie recipe?

Here's one but I have not made it.

 

Persian

 

 

Pumpkin Pie

---

1 unbaked 9-inch pastry crust

3/4 lb tofu

1 16oz can pumpkin

1 1/2 tsp cinnamon

3/4 tsp ginger

1/2 tsp nutmeg

1 tsp salt

1 tsp vanilla

1 1/2 tsp rice syrup or maple

1 1/3 cup sugar

1/3 cup oil

 

Preheat oven to 350F.

 

Blend all the ingredients in a blender until smooth and

creamy.

 

Pour this mixture into an unbaked pastry shell. Bake for one hour.

Chill in the fridge before serving.
