Seeing as we are on the subject of pies does anyone have a recipe for pecan

pie?

1 cup corn syrup

1 cup brown sugar or Sucanat

1/3 cup melted margarine

2 egg substitutes -- beaten

1 tsp vanilla

1 pinch salt

1 cup pecans

Prepared unbaked pie crust

 

Combine syrup, sugar, egg sub, margarine, salt, and vanilla. Pour into unbaked

crust, and sprinkle with pecans.

 

Bake in preheated 350 F oven 45 - 50 minutes or until center is set (Toothpick

or knife inserted in center comes out clean).

Vegan Pecan Pie

1 cup pecan halves -- generous

WHISK TOGETHER:

1 cup brown rice syrup

1 cup sucanat or brown sugar

1/3 cup earth balance -- melted

1/4 cup water -- beaten with

2 tablespoons energ egg replacer -- til no lumps show

1 teaspoon pure vanilla extract

pinch salt

 

Preheat your oven to 350 degrees F.

 

Have ready a 9 " unbaked single pie crust.

 

Pour this into the prepared crust. Sprinkle with pecan halves. Bake about 45

minutes, or til set (will still be a bit jiggly, though -- it'll get more solid

after it cools).

 

Cool on a rack, then refrigerate until serving time.

Amount Measure Ingredient -- Preparation Method

2 1/2 cups pecans -- toasted and coarsely chopped

3/4 cup maple syrup

1/3 cup brown rice syrup

1 tablespoon vanilla extract

1 tablespoon minced fresh ginger

1/4 teaspoon sea salt

3 tablespoons flax seeds

1 1/2 teaspoons arrowroot

1/3 cup soymilk

prebaked pie crust

 

To make the filling: Place the pecans in a large bowl.

 

In a medium saucepan, combine the maple syrup, rice syrup, vanilla extract,

ginger, and salt. Simmer the mixture for 5 minutes, then remove from heat and

allow to come to room temperature. In a spice grinder, grind the flaxseeds to a

powder.

 

Combine the arrowroot, soymilk, and flaxseed meal with the maple syrup mixture,

pour into a blender, and blend until smooth. Pour the liquid from the blender

over the pecans. Mix well and pour into a prebaked pie shell.

 

Bake at 350 F for 30 minutes, or until the filling has firmed up. Let cool.
