I don't know about Whole Foods (don't have one locally), but I've found

nutritional yeast and gluten flour at health food stores, usually in bulk

packaging. You can often find gluten flour at groceries, but it's usually

packaged in one-pound lots, which makes it rather expensive (eg. Bob's Red

Mill). For the vegan 'cheese', get plain Emes kosher gel, or agar, a.k.a.

agar-agar. They'll be used in different proportions though (see previous

message re: " Information on vegetable gelatins " ). Unfortunately, many HFS's

carry only the fruit-flavored vegetarian gels.

 

For the yeast, look for Red Star T-6335 formula, nutritional yeast, or

" vegetarian support formula " yeast. Make sure it's the golden-yellow kind, also

sometimes called " good tasting " or " flake " yeast. Some places carry it in bulk,

which is the most economical way to buy it.

 

For the gluten flour, look for Vital Wheat gluten or 75% protein gluten flour.

Make sure it isn't something like " high gluten flour " (~20% protein) which is

good for pasta and bread making. You could use it for making seitan, but would

have to wash out the remaining starch first. If the sales folk are unsure, you

can tell them it's for seitan (pronounced say-tahn), gluten or " wheat meat " .

HFS's often bulk-package this too.

 

Although I can get these things locally, I find it more convenient to order from

the two places below.

more for the same items than at Country Life. Large selection of grains, beans,

flours, etc. They carry agar powder, Red Star yeast flakes and Vital Wheat

Gluten. Prompt delivery.
