You might want to play with the recipe by incorporating the seasonings from the " Parmesan " into the Lessarella. ---------- Recipe via Meal-Master v8.06 Title: Lessarella Cheez Categories: Cheese sub, Dairy sub Yield: 24 servings 2 c Water 3 T Lemon juice 1/2 c Yeast flakes 1/3 c Quick oats 1/4 c Arrowroot or cornstarch 1 T Onion powder 1/4 c Tahini 1 1/2 t Salt Blend all ingredients on high for one minute. Pour into saucepan and cook on medium, stirring constantly until thickened. Put into loaf pan or other mold. Chill overnight. Remove from mold and slice. Delicious on crackers, pizza, or in sandwiches. Don't quote me, I honestly do not know one way or the other! For our pizza, I use this: http://recipes.vegweb.com/misc/5594.shtml The key with uncheese is toppings on a pizza. Vegan pepperoni, olives, green pepper, mushrooms and Bermuda onions are a MUST, and you should add more than that of your own chosing. I have to admit to LOVING UTTERLY uncheese sauce. I eat it spread on crispy tortillas, on chips, in mac and uncheese, in quesodillas, as a dip, I just love the stuff, but that is me. My husbands brother use to put Mayonnaise on his pizza, yuk! We do have the pizza with sauce and vegetables. It is my children who want to have a " cheese " on their pizza. Like all the other children. Children don't want to be so different all the time. I hadn't realized that the soya kaas wasn't vegan. I just noticed it the last time I bought. I either missed it in the ingrediants or they changed the recipe. I do know that they changed the packaging. What I an looking for is a firm tofu based cheese. They melt very well in recipes (at around 400-450 degrees) and don't get mushy or sticky if you just want to eat a slice plain or with crackers. They make cheddar, nacho, my favorite is the mozarella, and maybe a couple other flavors. FYH's market has only one location in the LA area and their products are sold of course at their own store, but also at Whole Foods Market. If you have a Whole Foods near you, I highly recommend FYH brand cheeses.
