Soya Kaas mozzarella

Hi,

 

Does anyone have a recipe that would make something similar to the Soya Kaas

mozzarella style soy cheese? My children love it but it is so expensive and

we use it so quickly. What kind of homemade cheese do you put on your

homemade pizza?

I've never tried that cheese but the following may work. These are from the

" Country Life Vegetarian Cookbook " © 1990 Country Life Publications. You

might want to play with the recipe by incorporating the seasonings from the

" Parmesan " into the Lessarella.

 

---------- Recipe via Meal-Master v8.06

 

Title: Lessarella Cheez

Categories: Cheese sub, Dairy sub

Yield: 24 servings

 

2 c Water

3 T Lemon juice

1/2 c Yeast flakes

1/3 c Quick oats

1/4 c Arrowroot or cornstarch

1 T Onion powder

1/4 c Tahini

1 1/2 t Salt

 

Blend all ingredients on high for one minute. Pour into saucepan and cook

on medium, stirring constantly until thickened. Put into loaf pan or other

mold. Chill overnight. Remove from mold and slice. Delicious on

crackers, pizza, or in sandwiches. May sprinkle on herbs and melt under

broiler.

Categories: Condiment, Dairy sub, Cheese analog

Yield: 16 servings

 

1/2 c Food yeast flakes

1/2 c Ground sesame seeds

1 t Garlic powder

1 t Onion powder

2 t Chicken-style seasoning (eg. G. Washington's)

1 T Lemon juice

 

Combine dry ingredients. Mix well and add lemon juice. Mix with hands.

Store in air-tight container. Use anywhere you would use Parmesan cheese.

Keeps well in refrigerator. Makes about 1 cup.

I thought Soya Kaas had casein in it, and if it does, it is not

vegan. Don't quote me, I honestly do not know one way or the other!

 

For our pizza, I use this:

The key with uncheese is toppings on a pizza. Vegan pepperoni, olives,

green pepper, mushrooms and Bermuda onions are a MUST, and you should add

more than that of your own chosing.

 

I have to admit to LOVING UTTERLY uncheese sauce. I eat it spread on

crispy tortillas, on chips, in mac and uncheese, in quesodillas, as a dip,

I just love the stuff, but that is me. Most folks don't feel this way

about it and it takes a lot of getting used to.

hey there,

i have found that pizza is great with out cheese at all. i've never found

a vegan cheese (soya kaas isn't vegan so i've never tried it) that is any

good. the closest i come now days is i put tahini sauce on my pizza

sometimes witch is great. try pizza with out cheese and you may be

very surprised at how good it is.

Thanks Jeff! Tahini on pizza, don't know if I'd like that. But hey, I'll

give it a try. My husbands brother use to put Mayonnaise on his pizza, yuk!

We do have the pizza with sauce and vegetables. It is my children who want

to have a " cheese " on their pizza. Like all the other children. Children

don't want to be so different all the time. I hadn't realized that the soya

kaas wasn't vegan. I just noticed it the last time I bought. I either

missed it in the ingrediants or they changed the recipe. I do know that

they changed the packaging. What I an looking for is a firm tofu based

cheese.

My favorite cheeses are the Follow Your Heart brand. They melt very well in

recipes (at around 400-450 degrees) and don't get mushy or sticky if you

just want to eat a slice plain or with crackers. They make cheddar, nacho,

my favorite is the mozarella, and maybe a couple other flavors. FYH's market

has only one location in the LA area and their products are sold of course

at their own store, but also at Whole Foods Market. If you have a Whole

Foods near you, I highly recommend FYH brand cheeses.
