Guest guest Posted November 2, 2003 Report Share Posted November 2, 2003 Baigan Bhartha Ingredients: 1 large or 2 small eggplants 1 yellow/white onion, finely chopped 1 medium tomato, finely chopped 1 mild green chilli, finely chopped 1/2 teaspoon red chilli powder 1/2 teaspoon garam masala powder 1/4 teaspoon tumeric 2 tsp oil 1 tsp salt 1/4 cup chopped coriander leaves (also known as cilantro) Preparation: Brush eggplant with 1 tsp oil and bake on a baking sheet at 400 degrees for about 30-40 minutes, turning frequently. The eggplant should be cooked throughly and shrink slightly. Submerge eggplant into cold water (ice in the water helps) and allow it to cool. Removed the blackened skin and mash the inner flesh with a fork, using a knife to cut up any stringy parts. In a frying pan coated with 1 tsp oil, cook onion and green chilli until golden. Add chilli powder, garam masala, tumeric, salt, tomatoes, and mashed eggplant and cook on high heat for 5 minutes. Garnish with coriander leaves and serve hot.
